Homemade Granola

Yoghurt and granola is my favourite go-to afternoon snack.  It keeps both myself and the toddler going until dinnertime.  However store-bought granola is incredibly expensive, and not very healthy.  This recipe for homemade granola is cobbled together based on the ingredients listed on the brands of granola that I liked.  It’s got no sugar or sweeteners at all and does a great job staving off hunger.  Once you have the ingredients, it doesn’t take very long to prepare and best of all – you can let your toddler help mix everything together. You can easily take out or add in any nuts and seeds you prefer.

I serve it on natural yoghurt and add a little honey to taste for me.  We get the Glenisk Pure Natural Organic Yoghurt which has no added sugar at all.  It’s produced by an Irish company and is easily available in your local supermarket.  You can check out other lovely recipes using Glenisk products via their competition.

 

Ingredients:

1 cup of Jumbo Rolled Oats
1/2 cup of Oatbran
1/2 cup of Dessicated Coconut
2 tbsp Walnut Pieces
1 tbsp Sunflower Seeds
1 tbsp Sesame Seeds
1 tbsp Chia Seeds
1/2 tbsp Flaked Almonds
2 or 3 tbsp melted Coconut Oil

 

Method:

Mix everything except for the coconut oil in a large bowl.

Spread it onto a baking sheet lined with baking paper.

Melt the coconut oil.  The lazy option is to scoop it into a cup and microwave on low until it melts.  Then pour the oil over the granola and mix it through.

Bake at 120 degrees for 15-20 minutes, mixing it halfway through.

Allow to completely cool, then place in airtight container.  It will keep for a couple of weeks.
